HACCP and the Codex Alimentarius

HACCP (Hazard Analysis and Critical Control Points) is a standard for identifying and controlling hazards in food production aimed at ensuring that food products are safe for consumption. It addresses microbiological, chemical, allergenic and physical hazards.
Codex Alimentarius is a collection of internationally recognized standards, established practices, guidelines and other recommendations regarding food, food production and food safety.
